Invoice editing on Windows

Unless I'm missing it somewhere, I don't see that there is the ability to set up or edit the invoice set up on Windows. If I want to change the header, etc., I need to make the changes on my ipad and sync everything then the changes show up on Windows. I can get it done fine, but would be nice to have the options on Windows also.

Yes, the Windows version has the same basic functionality as the iOS version.  Due to operating system differences, it may be in different places.  You will have do Edit the "Company" record and change the header information in there.  Note that you can download the same docs that are built-in to the app from our main website.  Just navigate to the proper platform (iOS, Android or Windows).
