Fields in Timesheet report

Can I create a timesheet report with headings e.g. using an employee as a category and printing out their timesheet, i would like to have their name listed as a heading.

I'm not exactly sure what you're asking?  First are you talking about the regular "Time (& Expenses)" report or the "Time Sheet" "Type".  Time Sheets specifically have the Day of the Week on them.  For regular Reports, Time and/or Expenses, you can reorder the columns if you want, but there is no "heading", per se, that you can modify.  If you need to do any more special sorting on the data, you will need to export as a CSV attachment and bring into a Spreadsheet program such as Excel or Numbers and work with that.  Hope that helps?
